Ingredients -
Wet ingredients:
2 ripe bananas (frozen and thawed)
2 eggs
2 Tbsp milk
1 tsp vanillla
1 tsp baking soda dissolved in 1/4 cup hot water
1/2 cup butter or coconut oil (I've used both)
Dry ingredients:
2/3 cup sugar
1 2/3 cup flour
1 tsp salt
Instructions -
1. Cream sugar, butter, eggs. Mix in bananas, milk, vanilla.
2. Mix in soda (dissolved in water), flour, salt.
3. Put in greased pan.
4. Bake @300 for 50 minutes. If making into muffins, bake @325 for 30 mins.
For this blog, I cut a few pieces of the banana bread. I would not recommend cutting bread until you are going to eat it, as cutting will make the bread dry out more quickly.
