I'm just going to start off by saying, I don't eat like this every weekend. I absolutely love to cook & bake when I have the time so I enjoy my relaxing weekends that allow me to spend some extra time in the kitchen.
This weekend, I went to the farmers Market and incorporated some of my market finds into these delicious meals. I am hoping to post some fun & delicious fall recipes soon! Stay tuned & let me know if you try any of the recipes below.
Meal #1 - Breakfast/Pre-workout fuel
Most mornings, I enjoy drinking my coffee and breakfast while reading a short devotional. Eating breakfast & spending some time with the Lord clear my mind & set me up with a good foundation for my day.
Peanut Butter Apple Oatmeal -
1/2 cup oats
1 Tbsp peanut butter
1 Tbsp apple sauce
Dash of cinnamon
Dash of vanilla
Sprinkle of sea salt
Add milk (soy, dairy, almond, cashew, oat) to desired thickness.
* Microwave for 2 minutes
* Add a dash of milk after cooking, wait to cool and enjoy!
Meal #2 - Lunch/Post-workout fuel
On the weekends, I try to allow myself an hour to two after my breakfast before I work out. Within 30 minutes after working out, I like to refuel after moving my body. This is more or a brunch type of lunch but I always love a good breakfast or brunch spread for any meal of the day! What's your favorite meal of the day?
Eggbake with Toast & Madarin Oranges.
Sausage & Pepper Eggbake -
15 eggs
1 lb browned sausage
3 cups shard cheddar cheese
3/4 cup heavy cream
1 pepper
1 small white onion
* Refrigerate overnight and bake for 1 hour @350.
Meal #3 - Dinner
After spending the afternoon lounging, watching church, virtually, and cheering on the Vikes, we make a couple homemade pizzas and roasted veggies before going for a nice evening stroll. It was a gorgeous fall night so we sat outside on the deck, enjoyed good company, tasty food and beautiful weather.
Pizza & Roasted Veggies.
Pizza -
We used two pre-made dough rounds, you can also make from scratch if you're feeling fancy and you have the time!
Top with pizza sauce, cheese and other desired toppings. We used canadian bacon and sausage.
* Bake according to pizza dough directions, we baked ours @450 for 10 minutes.
Roasted Veggies -
Cut up yukon gold potatoes & zucchini.
Spread on sheet pan
Season with salt, pepper, garlic and Lowry's.
Bake @450 for 30 mins or until done.
